What is Charcoal Slow Cooking?

Unlike regular BBQ where you cook food quickly over high heat slow cooking uses lower temperatures over a much longer period — typically 4 to 12 hours. The result is meat so tender it falls apart with incredible depth of flavour that simply cannot be achieved any other way.

What You Need to Get Started

Setting Up For a Slow Cook

Step 1 — Light a smaller amount of charcoal than you would for regular grilling. You want lower heat not maximum heat.

Step 2 — Push all your lit charcoal to one side of the BBQ. This creates your indirect cooking zone where the slow cooking happens.

Step 3 — Place your meat on the opposite side — away from the direct heat. Close the lid.

Step 4 — Adjust your vents to control temperature. More open means more oxygen means more heat. Less open means lower temperature. Aim for around 110 to 130 degrees Celsius.

Step 5 — Add a small handful of fresh charcoal every hour or so to maintain temperature. With premium hardwood charcoal like Ever Burning Charcoal you will need to top up far less frequently than with ordinary charcoal.
